We use this for Breakfast muffins to cupcakes at weddings

Banana ~ Orange Muffins


1 Cup Sugar

1/2 Cup Cooking Oil

3 Large Ripe Bananas (1 1/2 Cups)

1/4 Cup Orange Marmalade

2 Beaten Eggs

1 Cup All-purpose Flour

1 Cup Wheat Flour

2 Teaspoons baking powder

1 Teaspoons baking Soda

1/4 Teaspoon Salt

1/4 cup flaked coconut (optional)


Combine in mixer first 5 ingredients. slowly add salt, baking powder, baking salt and both flours. Add coconut if desired. Pour into greased 12 extra large muffin tins, or 2 loaf pans. Loafs will take approx. 45 min. at 325 degrees. Cupcakes 10-15 min

Zucchini Bread

2 Cups Sugar

3 Eggs

3 Cups Flour (Lightly spooned into measuring cup)

1 Cup Oil

2 Cups Grated Zucchini(skin on)

1 Tablespoon Vanilla

1 tsp Baking Soda

1 1/4 tsp salt

1/4 tsp baking powder

1 Tablespoon Cinnamon

Mix all together (don't Beat) and pour into two 9x5 greased loaf pans. Place in middle of oven but not touching 350 degree oven  for 1hr or until toothpick  comes out clean

Claudia's Cheese Balls

1/2 lb Grated Cheddar Cheese

1/2 Cup Butter

1 Cup Flour

1 tsp salt


Soften Cheese & Butter to room temp. Mix & add flour  & Salt. Roll into small balls. Put Spanish olives inside. Refridge over night.  Bake at 400 for 10-15 min. serves 20

Grandma Maudes Carrot Cake

1 cup Sugar

2/3 Cup oil

1 Cup Sifted Flour

1 tsp Baking Flour

1 tsp Cinnamon

1/2 tsp baking soda

1/2 tsp salt

2 Eggs

1 1/2 cups grated carrots

Combine sugar oil eggs and carrots. Add salt baking powder, soda and salt. Slowly add flour. Pour into 6 Lg greased muffin tin or 1  9" round cake pan Bake at 350 for 20-25 minutes
